Mughlai food originated from the kitchens of ancient Mughal emperors. Delhi, the center of Mughal empire is also the home of Mughlai food. The dishes have for centuries mesmerized the food lovers with their taste and flavor. Mughlai dishes use milk and cream combined with spices. Mughlai cuisine includes many famous dishes such as Kormas, Pasandas, Biryanis, Kebabs and Pulaos.

Chef's Recipe
BUTTER CHICKEN
Ingredients
1/2 cup yogurt ginger garlic paste chilli powder, garam masala chicken thigh fillets butter, onion, tomato puree thickened cream
Directions
- Place yoghurt, garlic, ginger, cumin, coriander, garam masala and chilli powder in a glass or ceramic dish.
- Add chicken. Stir to coat. Cover. Refrigerate for 2 hours.
- Heat oil and butter in a heavy-based saucepan over medium-high heat. Add onion. Add chicken mixture and cook, stirring until chicken just starts to change colour.
- Add tomato puree. Bring to boil, Reduce heat to low. Simmer, stirring occasionally, for 10 minutes.
- Stir in cream. Simmer for a further 5 minutes or until heated through.
- Serve with steamed rice and coriander leaves.
